April Showers

So, today I woke up and looked out the window and was suprised to find it raining. Funny right, because just like the old saying says, "April showers...May flowers" came on my mind. Now that it's April, I thought it was going to feel like spring with the colorful blooming flowers outdoors but, anyways I thought that shouldn't stop one from dressing in bright spring colors so I popped myself into my coral-pink PINK hoodie and pants which is soo colorful yet, cozy perfect for one of these days. Don't let bad weather stop you from rocking your bright spring color clothing.

How to: Carrot Cake


Well today, I've decided to share with all of you this delicious recipe on how to make this yummylicious{if thats even a word} carrot cake. Some ingredients needed will be quite different than all the other carrot cake recipes out there but trust me its a savory taste you cannot resist. 

Ingredients:
1 ¼ cup &  ¼ cup of All Purpose Flour
½ cup of Sugar
¼ cup of Brown Sugar
1 tsp of Baking Soda
2 tsp of Cinnamon
½ tsp of Salt
¼ tsp of Nutmeg
¾ cup of Vegetable Oil
2 Eggs
1 Tbsp of Vanilla Extract
1 tsp Grated Orange Zest
1 ½ cups Shredded Carrots
½ cup Raisins
{optional: ¼ cup finely chopped walnuts}


1. Preheat your oven to 350 degrees.
2. Spray preferred baking pan with non stick cooking spray, lay parchment paper on it, and set aside.
3. Zest an orange and carrots.




4. On a bowl toss together the ¼ cup of flour, shredded carrots, raisins, orange zest, {optional:walnuts}, until all is evenly coated in flour. {Reason: If not coated in flour all of these ingredients will fall to the bottom of the batter when baking}.



5. On a separate large bowl, mix together the rest of the ingredients including the 1 ¼ cup of flour until they are all well combined. 




6. Add the carrot, raisin, orange zest, {optional:walnuts} mix into the large bowl mixture until they are well incorporated into the batter.


{Yeah,... I know... it looks gross like this but trust me it smells good at this point and it's supposed to look like this when you know its well incorporated} 


7. Pour the batter into the baking pan and set into the oven for 30 minutes or until when inserted a toothpick in the center it comes out clean.  
8. Once the cake is done baking, let it cool completely before frosting with any preferred frosting. {I'm not a big fanatic of cream cheese frosting so I used vanilla whipped cream for the frosting and it turned out perfectly & delicious}.

how much I really really want to own one of these one of these days. I just have to love how amazing there photography comes out... I mean look at these wonderful pictures below. The pictures just have an urban sensation and they come out really spectacular and unique. Besides, the overall appearance of the camera looks very unique and it has a 20's feeling.{An era i'm currently obsessed with} 



There just something you can't just let go by you even though we're not in those eras anymore. One of these days, I'm going to have to buy myself one of these babies & make myself happy...
